Ingredients :
- 3 onions, finely chopped
- 6 cl of olive oil
- 8 cloves garlic, germ removed and chopped
- 4 kg tomatoes, peeled, seeded and chopped
- 1 large bunch gerni (thyme, bay leaf, parsley and celery leaves)
- Salt and pepper
- 30 g butter, softened


In a large heavy sasserole, the onions in the oil over low heat, stirring and caught without color.
Add garlic and cook until the garlic scent emerges. Add tomatoes and bouquet garni.
Season and simmer gently, uncovered, about 3 hours, stirring often.
The sauce should be thick and hold its shape when the cup on one side of the pan.
Add butter and stir.
