Ingredients :
- 1 egg yolk
- 1 rounded teaspoon mustard (15 g)
- 1 teaspoon wine vinegar (5ml)
- 1.5 dl sunflower oil
- Salt and pepper




Mix the egg yolk, mustard, vinegar, salt and pepper.
Gradually stir in the oil while whisking vigorously.
Make sure the firm texture, film and book fees.

Chef's tip :
Do not add salt at the end of development.
Fresh mayonnaise keeps 48 h, filmed cool.
