Ingredients :
- 250 g flour
- 1 pinch of salt (5g)
- 125 g unsalted butter, softened
- 1 egg yolk
- 50 ml of water


Sift the flour and salt. Work the flour and butter between your fingertips. Stir in the egg yolk and water.
Form a ball by kneading the ingredients quickly.
Mash the dough with the palm of the hand to make it smooth.
Let the dough rest for 20 minutes in the refrigerator.
Spread the dough with a roll on a floured marble circularly on 3mm thick.
Place the disk of dough into a pie pan.

Chef's tip :
The rest is important after making and facilitates the formatting.
The remaining dough can be reused provided to eliminate exceeding in flour.
